Which blackjack table rules should you check first?

This site does not print a single house-edge figure for blackjack, because there is no such thing as one blackjack. The number depends on the full rule set at that specific table, and operators do not publish a per-table figure. What a 6 to 5 natural actually costs you
Count the cards rather than trusting a feeling. There are 4 aces in a 52 card deck and 16 ten-value cards, counting tens, jacks, queens and kings. Either card can arrive first, so a two-card natural turns up roughly once in every 21 hands from a fresh shoe. That frequency is fixed by the deck, not by the table.
Now price it. At A$100 a hand, a natural at 3 to 2 pays $150 and the same natural at 6 to 5 pays $120, so every one of them is $30 less. Five naturals in a hundred hands means a short-pay table has taken an extra $150 out of that session, before a single decision of yours is involved.

The right-hand column assumes about five naturals per hundred hands, which is what the deck composition gives you. A live table deals somewhere near 50 to 70 hands an hour, so an evening at a 6 to 5 table at $50 a hand costs roughly a hundred dollars in payout alone. No amount of correct play recovers it, which is why the felt is the first thing to read.
Read the layout, not the table name
Names like Classic, Gold and VIP describe the limits and the studio, not the rules. Two tables in one lobby can differ on the natural payout, on soft 17 and on surrender while sharing a name and a dealer roster. The rules panel is the only reliable source.
How a blackjack hand plays out, in order

European tables usually deal the dealer a single card and take the second at the end. American rules give the dealer a face-down card and a peek for a natural.

The options available on the screen are the ones the rules allow. A greyed-out double or split is the table telling you its rule set.

The dealer plays a fixed rule, then settles
No judgement is involved: the dealer draws to 16 and stands on 17, hard or soft depending on the table. Your hand is compared and paid.
Nothing in that sequence is negotiable, and nothing in it is random once the cards are out. That is what makes blackjack different from a pokie: the decision is yours and it has a correct answer. Basic strategy is a lookup table, not a system
Basic strategy is the list of best plays for every combination of your hand and the dealer's upcard, worked out from the table's own rule set. It does not remove the house edge and it does not predict a shoe. It removes the cost of guessing, which for most players is the largest leak at the table. A handful of its plays never change, whatever the rules:

The rest of the chart shifts with the rules, which is the point: a strategy card printed for a table where the dealer stands on soft 17 is not the correct card for one where the dealer hits it. Read your table, then find the card that matches it. Card counting, the one approach that genuinely changes the arithmetic in a physical casino, does not transfer to a software table that reshuffles every hand, and live studios use deep shoes and frequent shuffles for the same reason.
Insurance and side bets: what you are being offered
Insurance is offered when the dealer shows an ace. It pays 2 to 1, which means it needs to win better than one time in three to break even. The dealer's hidden card is a ten-value card in 16 cases out of 52, which is under one in three before you even remove the cards you can see. The bet is priced to lose and the prompt is there because most players take it.
Side bets are separate wagers settled on their own paytable: 21+3 pays on your two cards plus the dealer's upcard making a three-card poker hand, perfect pairs pays on your first two matching, and the paytables differ between studios. None of them changes the main hand, none of them is covered by basic strategy, and the only place to read what you are being paid is that table's rules panel. Treat a side bet as a second game you have chosen to play at the same time.
